David's formal training began with a four-year Culinary Degree, which laid the foundation for his skills and knowledge in the kitchen. Over the years, he honed his craft in various prestigious establishments, including the Crowne Plaza, Renaissance, and Marriott hotels. His experiences in these environments not only enhanced his technical abilities but also exposed him to diverse culinary styles and practices.
David's culinary philosophy is rooted in his Jamaican heritage, emphasizing the use of fresh, local ingredients and the importance of flavor. His journey from a young boy enchanted by his grandmother's cooking to a seasoned professional in the culinary world is a testament to his dedication and passion for food.
Today, David continues to inspire others in the culinary field, sharing his love for cooking and his belief that food is not just sustenance, but a way to connect people and celebrate culture.
Food and Beverage Assistant Director, Chelsea Edwards, Certified Sommelier
Growing up in Rockford Illinois to a Sicilian Family is where the wine passion began. Chelsea graduated from Southern Illinois University with a Bachelor of Agriculture, specializing in Viticulture and Restaurant Management. Working in vineyards, wineries and tasting rooms, in the NRV and Southern Illinois sparked her interest in the Court of Master Sommeliers.
In 2014 she became a Certified Sommelier and moved to New Zealand to work in the wine industry on Waiheke Island. After three years as a Cellar Manager, she returned stateside to be the Head Mixologist and Beverage Manager for the Relais Chateau, Blackberry Mountain.Working as a sommelier with the country's second largest wine list, Chelsea was one of 9 to take care of a 660,000 wine bottle inventory and a 52 page whiskey list.
Chelsea returned to the NRV in 2022, with a brief break in 2024 to open a secret Speakeasy in Delray Beach Florida at the Wine Room. She joined Mountain Lake in the Spring of 2024 as a Food and Beverage Manager. Nowadays you will find her on a hiking trail picking edible spices with her beloved Saluki, John Belushi.
